The combination of these 3 producers allows for a coffee with body, sometimes tinged with the sweetness of caramel, and at other times with the acidity of lime.
The producer Datterra is strongly committed to sustainability. It is the first farm supported by the Rainforest Alliance in Brazil, and a key local player in terms of innovation for both quality and sustainability of their production.
The cooperatives from which the coffee from Peru comes are certified organic. They admirably combine the quality of their coffee with a progressive social commitment to enhance the daily lives of the farmers. They use methods to better preserve the environment and improve the management of wastewater.
Sumatra coffee benefits from a particular climate and very volcanic soil that gives the coffee its unique characteristics. The fermentation practiced in Indonesia is similar to a semi-washed fermentation but is called "wet hulling." This is what gives a very distinctive color to the green beans.
